Intrepid chef Dan Hong has rattled the pans at some of Sydney's finest culinary icons including Tetsuya's, Longrain and New York's shrine to molecular gastronomy, WD~50.
Still only in his mid-20s, Hong has landed the head chef gig at luxe Potts Point bistro and drinking den, Lotus.
Previously under the guidance of Merivale maestro Lauren Murdoch, Lotus wowed locals and food cognoscenti alike with her take on traditional comfort fare given a contemporary edge. Hong gloriously continues this trend with simply constructed dishes (some inflected with Hong's Asian heritage) sure to warm the hearts and tummies of many a diner
