The public bar/restaurant for the people, on the beach. Ever since the oceans became the people’s mode of transport, the spice trade has characterised the main routes of commerce throughout the world. Spices were used for food, currency, religion, and medicine. It’s no surprise spice has a huge influence in gregarious share plate eating that is prevalent in the sea ports of all the spice routes in Asia, Europe, Africa and the Americas. Our menu is designed it be a tribute to this food style, with drinks and music to match. Of course you can have a plate to yourself too. Greedy guts. Republica is social eating and fun. For the people. On the beach.
The options for functions are as diverse as our menu and drinks list. We have had everything from a petting zoo for a kid’s party, to the most glamorous wedding you can imagine. There is a diverse range of spaces. We have access to the St Kilda Sea Baths Rooftop for ceremonies and functions. Given we live in Melbourne, the Rooftop provides either an ultramarine view of Port Phillip Bay’s best Mediterranean impersonation, or the space can be weather protected with a marquee to provide all the broody excitement of Melbourne being as only Melbourne can be. Either way, it’s an incredible area for a function. But lets face it; the inconvenient truth is that it’s mostly sunny up there! The Republica Garden is the huge public courtyard we have dutifully filled with greenery. It has an area with weather protection and heating, but the Republica Garden can also be covered completely to provide an incredible atmosphere or left open for amazing summer nights. Republica also has the Beach and Park areas for uninterrupted views of the beach and water. They are great for outdoor afternoons, but demand good weather. Republica has an indoor function area. When it’s not dining for non function trade, this area is used for degustation nights, weddings, parties and conferences of all sorts. There is the smaller PDR section (no one can remember what acronym stands for) that is also great for smaller affairs.

Republica Dining provides food with a simple philosophy: Use only the best fresh ingredients in the cleanest kitchen (that’s why there’s a window into ours); and cooking using the most interesting cooking ideas from all around the world. What we have produced is a culinary bonanza that is uniquely Australian because it’s as multicultural as our country. The Republica Dining kitchen serves the whole of Republica St Kilda Beach. But only the Dining area is table service.
