His latest venture is in the heart of seedy st kilda.
Once again Six Degrees have taken an historical pub and married it with comtemporary cool. A mix of indoor and outdoor spaces meld seamlessly creating an environment suitable for all seasons, with one eye on Melbourne's weather.
Chef Paul Wilson has taken inspiration from California with its many cultural influences including its Southern neighbours. He describe food offer as a 'Market driven, Californian inspired, Hispanic Grill'.
Think woodfired ovens, barbeques and lots of meat.
